Preparation
Mix the Batter
Preheat your oven to 400ยฐF and grease an 8x8 baking pan. In a large bowl, whisk together the cornmeal, flour, and baking powder until evenly combined. In a separate bowl, whisk the milk, eggs, and melted butter until smooth. Pour the wet ingredients into the dry and stir just until combined โ€” a few small lumps are fine and actually help keep the cornbread tender.
Fold in the Jerky
Gently fold the finely chopped Sweet Volcano jerky into the batter. Distribute it evenly so every slice gets its share of sweet-heat pockets. The jerky softens slightly during baking, releasing its flavor into the surrounding cornbread.
Bake & Serve
Pour the batter into the greased pan and smooth the top. Bake for 20โ€“25 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean. Let it cool for a few minutes before slicing. Serve warm with butter โ€” the sweet-spicy jerky makes this a standout alongside chili, barbecue, or a weekend brunch spread.
